Soba Restaurant-Style Curry Soba Noodles

I love the curry soba noodles served at soba-ya (restaurants specializing in soba dishes). I revised the recipe to make it even simpler.

Ingredients: 1 serving

Boiled soba noodles
1 pack
Thinly sliced pork (or chicken)
80 g
Onion, thinly sliced
○ Sake
2 tablespoons
○ Soy sauce
1 tablespoon plus
○ Mirin
1 tablespoon plus
○ Dashi stock (Or use 1 1/2 teaspoons of dashi stock granules dissolved in hot water)
600 ml
Green onions (chopped)
To taste
● Curry powder
1 teaspoon
● Curry roux block (mild or medium hot)
a bit less than 20 g
Katakuriko slurry
a bit less than 2 teaspoons


1. Put the dashi stock in a pot. Add the thinly sliced onion, pork and sake. Simmer while skimming off any scum. When everything is cooked add, the soy sauce and mirin.
2. Add the curry powder and simmer some more. Quickly warm up the boiled soba noodles in boiling water (or if you're using dried noodles, cook them following package directions). Add the curry roux and katakuriko dissolved in water to the pot. Add the soba noodles and cook through.
3. Sprinkle with chopped green onions to finish.
