Easy Kabocha Squash Salad

You can make this in 5 minutes using frozen kabocha squash. It's a very smooth kabocha squash salad that's great for bento.

Ingredients: 2 servings

Kabocha squash (skin and seeds removed)
150 g
1 tablespoon
Plain yoghurt
1 tablespoon
to taste


1. Chop the kabocha squash into pieces. Place them in a heat-resistant dish, cover in plastic wrap and microwave for 3 1/2 minutes (I use frozen kabocha).
2. While the kabocha is still hot and tender, mash it with a fork, and mix in the yoghurt and mayonnaise.
3. Season with salt to taste, then chill in the refrigerator. It's done!
