Vegetarian Zucchini Sushi

I love zucchini! It's meaty and tasty when cut into thick slices, but it's just as delicious in thin slices as well.

Ingredients: 2 servings

about 5 cm
Sushi rice
2 rice bowls' worth
Olive oil
as needed
Salt (preferably of high quality)
a small amount
Soy sauce with wasabi mixed in
as needed


1. Slice the zucchini into rounds 2-3 mm thick! It's easier to shape it with rice if it's thinner.
2. Lightly coat a frying pan with olive oil, and fry the zucchini from Step 1 on both sides. Don't forget to sprinkle on a little salt.
3. Now you have sushi rice and zucchini to make sushi balls.
4. Place a slice of cooled zucchini onto a piece of plastic wrap, and put a small mound of rice (bite-sized) on top.
5. Squeeze and shape into a ball!!
6. It goes really well with wasabi and soy sauce.
