Puffy Rice Flour Pancakes

Puffy Rice Flour Pancakes

Pancakes made from rice flour are so soft and chewy. They have such a gentle taste that I want to eat them over and over again!

Ingredients: 2 servings

Rice flour
100 g
Sugar or raw cane sugar
30 g
Baking powder
4 g
80 g
Vegetable oil or Rapeseed oil
1 tablespoon

1. Combine the rice flour, baking powder, and sugar with a whisk. Add the egg, milk, and vegetable oil and mix.
2. Once smooth, cook the pancakes in a frying pan. Pour the batter into a heated frying pan until golden brown (don't use oil).
3. You can eat them plain or you can top them with jam or honey.

Story Behind this Recipe

I uploaded a different recipe for rice flour pancakes, but when those cooled, they didn't taste very good so I came up with a new recipe. This time they taste great when freshly made and when cooled. You can also taste the sweetness of the rice flour.
