Lettuce Salad with Shio-Koji

This lettuce salad is filled with the umami of shio-koji, salt-fermented rice malt! You'll want to eat a ton of lettuce with this. You can make it in no time flat too!

Ingredients: 2-3 servings

Iceberg lettuce
Nori seaweed
1 whole sheet
◎ Shio-koji
1 tablespoon
◎ Vinegar
1 teaspoon
◎ Sesame oil
1 teaspoon


1. Wash and rip up the lettuce into easy to eat pieces, and dry well.
2. Mix the ◎ ingredients together, toss with the lettuce and ripped up nori seaweed, and it's done!

Story Behind this Recipe

I wanted to make a tasty salad using shio-koji, which is full of things that are good for your body. Even my 4-year-old son gobbles up this salad. (His dad, too!) We have it almost every day these days.
