Simple Cod and Manila Clams Steamed in Wine

This is a simple and authentic acqua pazza.

Ingredients: 2 servings

Salted cod
2 pieces
Manila clams (asari)
20-30
Onion
1/2
Bacon
about 3cm
Butter
5 g
White wine
50 ml
Parsley (Italian parsley if available)
as needed
★Butter
5 g
★Heavy cream
25 ml
★Salt and pepper
if it isn't salty enough

Steps

1. Put the clams in water to remove the salt. Finely chop the onion. Slice the bacon into thick strips.
2. Melt the butter in a saucepan and fry the cod skin-side down. When the colour has changed a little, add the clams, onion, bacon and white wine. Put the lid on.
3. When the clams have opened up, serve the cod and clams on a dish.
4. Reheat the rest of the sauce in the pan and when it comes to the boil, add the ★ butter and heavy cream. Gently shake to combine everything.
5. Pour the sauce from Step 4 onto the dish from Step 3. Lastly, decorate with Italian parsley and it's done!
