My Family's Soy Milk Hot Pot

This is a delicious soy milk hot pot made with gentle-tasting dashi seasoning.
The pork and tofu are amazing.

Ingredients: 2 servings

Water
500 ml
Kombu for dashi stock
1 piece
Soy milk
500 ml
★Salt
1 teaspoon
★Weipa or dashi stock
2 teaspoons
★Mirin
1 tablespoon
★Sake
1 tablespoon
★Miso
1 tablespoon
Tofu
1 block
Pork belly
300 g
Chinese cabbage
1/4 - 1/3
Ingredients of your choice - Japanese leek, carrot, etc.
as needed

Steps

1. Put the water and kombu in a pot and place it on the heat.
2. Remove the kombu just before it starts to boil, and add the soy milk and the ingredients marked ★. Turn the heat on again (we eat the kombu as well, so we keep it in.
3. When it has come to the boil, add the other ingredients, and let them cook through to finish.
4. The pork is nice with a sprinkle of salt.

Story Behind this Recipe

Store-bought soy milk soup is expensive and seasoned a bit too much, so I just made my own.
