Sakura Shrimp Onigiri for Cherry Blossom Viewing

As their name suggests, these sakura shrimp have a beautiful sakura-like pink colour, which makes them perfect for spring-themed rice balls. They're bite-sized, making them easy to transport to cherry blossom viewings or picnics.

Ingredients: 2 rice cooker cups' worth

Uncooked white rice
2 rice cooker cups (360 ml)
Sakura shrimp (tiny dried shrimp)
100 g
Soy sauce
1 tablespoon
Sake
1 tablespoon
Mirin
1 teaspoon
Mitsuba
as needed

Steps

1. Rinse the rice and add all of the ingredients except for the parsley to the rice cooker. Fill the rice cooker with water up to the 2 cup mark and set to cook.
2. Shape into bite-sized rice balls, then garnish with Japanese parsley or sprigs of sansho to finish!!
