This is an easy diet cookie that doesn't use sugar or oil! It's so full of okara that you'll be wonderfully satisfied!
I thought up a version of "Easy and healthy rice flour and okara cookies!" using cake flour.
The temperature of the room and the moisture of the okara will affect how hard or easy it is to shape the cookies. If it's too hard, add a little bit of milk (or soy milk).
