This is an easy Kansai-style udon soup.

Ingredients: 1 servings

Dashi stock (bonito and konbu based)
350 ml
Usukuchi soy sauce
1 tablespoon + 1 teaspoon
Mirin
a small amount
Salt
a pinch

1. Add the seasonings to the dashi and bring to a boil.

Story Behind this Recipe

I came up with an easy way to make udon soup so that I wouldn't have to use store-bought soup for lunch.
This is also great with thick somen noodles.
