Spinach and Onion Popeye Salad

Spinach and Onion Popeye Salad

The new spinach varieties are not too bitter and can be eaten raw in salads. Toss the leaves with a special homemade dressing for a tasty Caesar salad.

3 to 4 stalks
Sweet onion
Fried garlic chips
to taste
Rucola (optional)
to taste
Grated cheese
to taste
French dressing
Vegetable oil
2 tablespoons
Rice vinegar
1 tablespoon
Lemon juice
1 teaspoon
2 pinches
2 pinches
Whole-grain mustard
1/6 teaspoon

1. Rinse the spinach, soak in water for 5 minutes to remove the bitterness, then chop into 4 - 5 cm lengths. Thinly slice the onion, lightly rinse, and drain.
2. Combine the dressing ingredients. (The photo shows 5 times the amount of ingredients combined in a lidded, non-leaking container. When shaken, the liquid should be cloudy.)
3. Garnish with fried garlic chips and grated cheese, toss with dressing, and serve.

Story Behind this Recipe

The combination of French dressing with fried garlic chips and grated cheese gave a Caesar salad-like taste, so I thought it would go well with spinach.
I revised the recipe to 1 serving amount of dressing.
