Miso Soup with Leek and Tempura Crumbs

A rich and tasty miso soup with leek and tempura crumbs.

Ingredients: 4 servings

Japanese leek
Tempura batter crumbs
1 tablespoon plus
Dashi stock
600 ml
about 2 tablespoons
Shichimi seasoning
to taste


1. Make the dashi stock with bonito flakes. Slice the leek diagonally. Bring the dashi stock to the boil and add the leek and tempura crumbs.
2. Let it simmer for 1 minute, then add the miso. Transfer to serving bowls and season with shichimi spice if you like.
