Spicy and Delicious Meat Miso

You can use this meat-miso as a topping, mix it in, wrap it up... It goes with anything. You can also make it in bulk and store it in the freezer!

Ingredients: 3 servings with leftovers

Minced beef and pork mix
About 300g
Bamboo shoots (boiled in water)
1 medium package
Shiitake or shimeji mushrooms
4-5 shiitake mushrooms, or 1/2 package shimeji mushrooms
Japanese leek
1/2 stalk
Garlic (in a tube)
1 clove
Sesame oil
To taste
Flavoring ingredients:
♡Ginger (tubed)
1 clove
1-2 teaspoons
♡Soy sauce
3-4 tablespoons
3-4 tablespoons
♡Chicken stock granules
1 tablespoon
1 tablespoon
1 cup
Katakuriko and water (for thickening)


1. Prepare the ingredients...
2. Prepare the seasonings...
3. Finely chop the ingredients.
4. Heat vegetable oil in a pan (not listed), and add doubanjian and garlic.
5. Add the minced meat once the garlic is aromatic, and sauté.
6. Once the meat has cooked through, add finely chopped bamboo shoots and sauté some more.
7. Next, add the ♡ flavoring ingredients, and boil over low heat... Flavor with salt and pepper while checking the flavor.
8. Once the liquid has evaporated, add katakuriko dissolved in water and mix, add a round of sesame oil, and it's done.
9. Top on freshly boiled udon noodles, and you have pseudo hot Ja-ja noodles!
10. Add it to cold udon noodles and you have pseudo cold Ja-ja noodles!
11. I tried it on rice too!

Story Behind this Recipe

I wanted to eat Jaja noodles and went about making the meat-sauce topping, but it came out tasting very different from what I intended. But I actually like this flavor the best!
