Moist Milky Madeleine

The skim milk and whole milk combination enriches the flavor. The almond flour and honey are very fragrant and it's moist madeline.

Ingredients: 20 Madeline cups

★Cake flour
100 g
★Almond flour
20 g
★Skim milk
20 g
★White sugar
★Baking powder
2.5 g
Unsalted butter
2 (100-120g)
40 g
Vanilla oil
a few drops
1 tablespoon


1. Coat the cups with oil. Sift the bread flour if you need. Microwave the butter to dissolve. Preheat the oven at 170°C.
2. Sieve the ★ flours into a bowl. Mix the eggs, honey, vanilla and milk together. Add the sieved ★, too.
3. Add the dissolved butter to mix in. The batter is done when the mixture becomes smooth. Rest for 1 - 2 hours.
4. Fill the cups about 80% full and tap the bottom to flatten the surface. I use rose shaped silicon cups.
5. Bake for about 20 minutes at 170°C. Check by inserting a skewer and if it comes out clean, it's done. Take the Madeleine out from the cups and cool on a cooling rack.
6. When they are nearly cooled, cover with a plastic wrap to avoid drying. To store them, wrap or put into a plastic bag.

I tried many variations, and finally found that adding skim milk and milk makes a milky flavor. Then it's tasty and my kids love it.
