Slice the asparagus diagonally and cook through. (I splash some water over the asparagus and microwave for 1 1/2 minutes)
Cut the potatoes into bite-sized pieces and cook through (I microwave them for 3 minutes).
Add the ingredients for the cheese dressing in a heatproof bowl and lightly cover with a plastic wrap. Microwave for 30 seconds and stir. Then microwave another 20 seconds.
Plate the potatoes and asparagus and pour over the cheese sauce while it's still warm. Put the cherry tomatoes on top and sprinkle with salt and pepper.
Story Behind this Recipe
I love warm salads and often try different ways of making them.
Cook the vegetables the way you like them (microwave, boil, steam etc...) I eat my tomatoes cold, but you can heat them up in the microwave if you like. Pizza cheese can be replaced with a slice of easy-melting processed cheese (just make sure to tear it into pieces)!
