Easy Tanuki Rice Bowl for One

It's easy and quick to whip up, but it's mildly seasoned and tastes somewhat nostalgic of my mother's cooking.
Tempura crumbs absorb the sauce well and create a juicy result.

Ingredients: 1 serving

Tempura crumbs
a handful
*Soy sauce
1 tablespoon
1 tablespoon
*Dashi (water + dashi stock granules)
100 ml
1/2 tablespoon
Cooked rice
1 serving


1. Slice the onions thinly. Slice along the grain for the texture, or against the grain for softness and sweetness.
2. Boil the * ingredients in a small skillet or one-handled pot.
3. Add the onion and cook until softened. Toss in the tempura crumbs.
4. When tempura crumbs absorb the sauce, drizzle in the beaten egg. Heat until it's cooked to your liking and serve over a bowl of rice.
