Simmered Potatoes

These are soft and flaky simmered potatoes. They're also tasty when cooled, so they are great for your bento lunch boxes.


Potatoes (Irish Cobbler)
4 - 5
Dashi stock
300 - 400 ml
3 tablespoons
Soy sauce
2-3 tablespoons
2 tablespoons
1-2 tablespoons


1. Peel the potatoes and cut into 4 pieces. Put the dashi stock and potatoes into a pot and bring to a boil. Once boiling, add the sugar and cover with a drop lid. Simmer for 5 minutes.
2. Add the remaining ingredients and let simmer for 15 minutes over medium-low heat. When the potatoes have softened, raise the heat to high and evaporate the liquid.
