Put the chocolate and butter in a pan, and melt over low heat. When it's all melted, take it off the heat and leave to cool. Preheat the oven to 190 °C.
Dissolve the instant coffee in hot water, and put a bowl with the egg, sugar, and vanilla essence. Mix with a whisk.
Add the chocolate-butter mixture from Step 1, and mix in well.
Add the flour, and fold it in using a spoon or spatula.
Pour the batter into a parchment paper lined pan.
You can mix chocolate chips or nuts etc. into the batter, or sprinkle them on top. I like to mix in half and sprinkle on the other half.
Bake for 15 to 20 minutes at 190 °C!
Leave to cool in the pan, cut into squares, and these rich brownies are done.
Try this as a party cake.
