Easy with Pancake Mix Tofu and Roasted Soy Flour Cake

All done in one bowl, this is a moist and healthy oil-free cake!

Ingredients: 1 15cm cake mould

Pancake mix
100 g
Silken tofu
240 g
Kinako
20 g
Egg
1
Brown sugar (white sugar is OK too)
45 g

Steps

1. Pre-heat the oven to 340°F/170°C.
2. Drain the tofu, place in a bowl and crush with a whisk.
3. When the tofu has become smooth, add the egg and mix.
4. Add the sugar, pancake mix and soy flour, and whisk until everything has fully blended together.
5. Pour it into a mold lined with baking paper and bake for 25 minutes at 340°F/170°C. Cover with foil half way through to make sure the surface doesn't burn.
