Basic Mayonnaise

After you try this, you'll never be able to go back to store-bought.
It's a lot of work to beat with a whisk, so use a hand mixer.


★ Egg yolk
★ Salt
1/3 teaspoon
★ Spicy mustard
1/3 teaspoon
★ Pepper
a small amount
Vegetable oil
150-200 ml
1 tablespoon
a pinch


1. Take the egg out of the refrigerator and bring it to room temperature. Add the ★ ingredients in a bowl and beat with a whisk until thickened.
2. When the egg is mixed well, add vegetable oil a little at a time, by pouring in a thin thread. Beat the mixture really well.
3. While mixing, add a few drops of vinegar and mix well. Add vegetable oil and mix even more. Repeat a couple of times.
4. When the mixture becomes thick and opaque, add the sugar and mix well. Use the freshest eggs possible.
