Spring Cabbage Coleslaw

A simple and delicious coleslaw made with spring cabbage.

Ingredients: 4 servings

Spring cabbage
Red onion (small)
2 slices
3 tablespoons
★Vegetable oil
2 teaspoons
1 teaspoon
1 teaspoon
★Lemon juice
1 teaspoon
2 pinches
★Black pepper
to taste


1. Julienne the cabbage and ham. Thinly slice the onion and sprinkle with salt. Soak it in water then squeeze out the moisture.
2. Put the cabbage in a bowl and sprinkle on a bit of salt (not listed). Squeeze out the moisture when it has wilted.
3. Put the cabbage, onion and ham in a bowl and mix in the ingredients marked ★.

Story Behind this Recipe

This is a standard dish in my house. It's also nice made with vegetable oil, vinegar, salt, pepper and mustard. It's easy to make with mayonnaise, sushi vinegar and black pepper.
