Superb Sweet Boule Made with a Rich Dough

Superb Sweet Boule Made with a Rich Dough

This is a boule with a very rich dough and cookie crust topping. Make the dough in a bread maker, and just mix up the cookie dough.

Ingredients: 10

Bread dough (Brioche dough)
Bread (strong) flour
200 g
50 g
30 g
Egg + Milk
140 ml
1 teaspoon
Dried yeast
1 teaspoon
Cookie dough
Cake flour
50 g
50 g
Egg (medium)
50 g
Vanilla essence (optional)
3 drops

1. Make the dough in the bread maker up to the first proofing.
2. This is a rather rich dough, so it will look like this at first, but it will eventually ball up.
3. Make the cookie batter while you wait. Combine all the ingredients into a bowl and vigorously mix.
4. Mix it until the margarine granules have disappeared.
5. Put the batter into a piping bag to squeeze it on top of the bread dough.
6. After the dough is done, place it on your working space sprinkled with flour.
7. Divide each piece into 40 g and roll it up.
8. I made 10.
9. Cover with plastic wrap let it rest for 20 minutes.
10. Roll the dough again into balls and drop into molds.
11. Let rise in a warm location for 40~50 minutes.
12. It is good to go once it has slightly increased in size.
13. Squeeze the cookie batter on top of the dough.
14. Bake in an oven preheated to 190°C for 15 minutes.
15. I only used about half of the dough, so I stored the leftovers in the freezer. Let it thaw naturally in the fridge when using it.
