This is made with ginger pickled in loads of honey, so the ginger is soft and oh so sweeeet! A nice snack to warm you up on cold days.
I had a lot of honey ginger (Recipe ID: 1698696) so I used it to make muffins.
If you drain the honey from the ginger, the batter won't be so heavy. Drain well and they'll be really moist.
