1 Bowl Recipe: Pancake Mix Ginger & Honey Muffins

This is made with ginger pickled in loads of honey, so the ginger is soft and oh so sweeeet! A nice snack to warm you up on cold days.

Ingredients: 6 muffins

Pancake mix
200 g
Butter
40 g
Sugar
40 g
Egg
1
Milk
80ml
Ginger Pickled in Honey (Recipe ID: 1698696)
4 tablespoons

Steps

1. Remove the ginger from the honey and chop it up finely. Preheat the oven to 180°C.
2. Microwave the butter for 20 seconds. Add the sugar and mix.
3. When it has become smooth, add the egg and mix some more.
4. When the egg is fully mixed in, stir in the milk.
5. Cut in the pancake mix. Add the ginger and mix while the batter is still floury.
6. Fill the muffin cups around 50-60%, and drop the tray from a low height to release any air bubbles. Top the muffins with ginger (not listed) for decoration.
7. Bake in a preheated oven at 180°C for 20 minutes (adjust the baking time according to your oven.)
