Salmon and Potato Piccata

The combination of salmon and potato is delicious.

Ingredients: 2 servings

Raw salmon
2 pieces
Potatoes (medium)
1/2 teaspoon
Margarine (butter preferred)
10 g
Olive oil
2 teaspoons
Parsley (if you have some)
To taste


1. Heat up 1 teaspoon of olive oil and the margarine/butter in a frying pan. When the margarine/butter has melted, put the salmon in and pan-fry.
2. Remove the bones from the cooked salmon, and flake it.
3. Peel the potatoes and boil them. Drain well, and mash.
4. Heat up the frying pan again with 1 teaspoon of oil over a low heat.
5. Beat the egg.
6. Mix the flaked salmon and mashed potato together, divide into 4 portions, and form into patties.
7. Dip the patties into the beaten egg, and pan fry.
8. When both sides are brown, they are done. Transfer to serving plates and sprinkle with chopped parsley.
