Simple Somen Noodles in Hot Soup

Serve somen noodles in a warm dashi broth. Serve as a hangover cure or an easy dish to consume when you're fatigued.

Ingredients: 2 servings

Dashi stock (kombu and bonito based)
4 cups (800 ml)
Somen noodles
2 bundles
Shiitake mushrooms
2 slices
Mitsuba or young green scallion
a little
4 tablespoons
Usukuchi soy sauce
1 tablespoon


1. Boil the somen noodles to al dente. Drain in a colander and wash the noodles under water.
2. Pour the dashi stock and sake into a pot. Once it comes to a boil, add usukuchi soy sauce, a pinch of salt and sliced shiitake mushroom.
3. Add the somen noodles, bring it to a boil again, and it is done.

I made this dish with leftovers when I was down with a hangover. A light and simple dish that'll calm the stomach.
