Microwave the unpeeled kabocha for 4 minutes in the silicon mould. Wash and grate the unpeeled carrot.
Mash the kabocha with a spatula or spoon.
Knead the butter and mix in the honey, one tablespoon at a time.
Add all the ingredients, mix well, and pour the batter into the silicon mould. Put the lid on and steam in the microwave for 5-6 minutes.
This is it! It's large so it takes a while to cook right through. If it's still only half-cooked, slice it and steam each portion separately!
Wrap the leftover slices and keep in the freezer. Just warm them up in the microwave and enjoy!
Story Behind this Recipe
I had lots of carrots and kabocha I wanted to use up, and I wanted to make a cake! That's when I decided to come up with this recipe.
The kabocha and carrot are unpeeled, so it's packed with nutrients It's very sweet with the honey, so reduce the amount if you'd like a milder sweetness If your silicon mould is small, i.e. the size of your palm, half the amounts of the ingredients listed will be enough!
