Cooked with a Pressure Cooker: Fresh Potatoes with Sweet Miso

I made these hot and soft potatoes in a pressure cooker.

Ingredients: 4-5 servings

New potatoes
500g
Vegetable oil
1 teaspoon
◆ Miso
3 tablespoons
◆ Sugar
3 tablespoons
◆ Mirin
2 teaspoons
◆ Soy sauce
1/2 teaspoon
◆ Japanese dashi powder
1/2 teaspoon
◆ Water
80ml
White sesame seeds
to taste

Steps

1. Thoroughly rinse the potatoes in water and drain in a sieve.
2. Coat the pressure cooker with oil, add the potatoes, and saute. Once they are coated in oil, add in the ◆ ingredients. Miso is difficult to dissolve, so make sure to dissolve it properly.
3. Add a drop lid in the pot, cover with a lid and bring to medium heat. After the pressure cooker pin has risen and has pressurized, reduce to low heat, and cook for 5 minutes.
4. Turn off the heat. Once the pressure has dropped, remove the lid, and boil it down over high heat to thicken. It's done . Arrange on a plate, and sprinkle with sesame seeds.

Story Behind this Recipe

I like new potatoes that a fried and then simmered in sauce, so I cooked them up quickly and easily using a pressure cooker.
