A Low Calorie Snack: Adzuki Bean and Okara Mochi Cakes

Just mix, shape, and microwave.
These sweet, delicious and chewy mochi are full of dietary fiber and nutrients.

Ingredients: 1~2 servings

Fresh okara
50 g
Katakuriko
25 g
Water
30-40 g
Canned cooked adzuki beans (sweetened)
30 g (or more to taste)

Steps

1. Mix together all the ingredients except for the adzuki. Once well-mixed, mix in the adzuki. (If you dissolve the katakuriko into the water beforehand, it will be easier to mix.)
2. Divide into 8 portions and shape into discs. Arrange on a plate. (Make each piece about 1 cm thick.)
3. Wrap the dish with plastic wrap and heat in the microwave for 1 and 1/2 minutes to finish. If they're not firm enough, continue heating for 15 seconds at a time, while keeping an eye on them.
