Mix together all the ingredients except for the adzuki. Once well-mixed, mix in the adzuki. (If you dissolve the katakuriko into the water beforehand, it will be easier to mix.)
Divide into 8 portions and shape into discs. Arrange on a plate. (Make each piece about 1 cm thick.)
Wrap the dish with plastic wrap and heat in the microwave for 1 and 1/2 minutes to finish. If they're not firm enough, continue heating for 15 seconds at a time, while keeping an eye on them.

These are great for when you want to add a lot of fiber to your diet.
If you over-cook the mochi, they will go from being chewy to being hard! They will retain their texture when cooled, but if you let them sit for some time, they may harden. In that case, wrap in plastic and lightly heat in the microwave.
