Tenshin Rice Made with Silken Tofu

Even though you only use 1 egg for each serving, it's plenty filling! Silken tofu gives it a fluffy texture.

Ingredients: 2 servings

Silken tofu
150 g
Green onion or scallion
as desired
Salt and pepper
a small amount
For the sweet vinegar sauce:
Chicken bouillon powder
200 ml
Sugar, Mirin, Soy sauce
2 tablespoons each
a pinch
1 tablespoon
Katakuriko slurry
as needed


1. To make the sweet vinegar sauce, add the ingredients for the sweet vinegar sauce to a pot and bring to a boil. Then add the katakuriko slurry and stir to thicken.
2. Mash up the tofu completely.
3. Mix the tofu, eggs, green onions, salt, and pepper.
4. Add oil to a frying pan, then cook the tofu and egg mixture.
5. Flip quickly and place on top of rice.
6. Pour the sweet vinegar sauce over it, and it's all done.
