To make the sweet vinegar sauce, add the ingredients for the sweet vinegar sauce to a pot and bring to a boil. Then add the katakuriko slurry and stir to thicken.
Mash up the tofu completely.
Mix the tofu, eggs, green onions, salt, and pepper.
Add oil to a frying pan, then cook the tofu and egg mixture.
Flip quickly and place on top of rice.
Pour the sweet vinegar sauce over it, and it's all done.

I came up with this recipe when I was trying to make this dish more filling.
This dish is very soft because of the tofu in it. When you flip it, do it quickly!! If the pan is well coated with oil, you should have no problem. Don't be nervous, just put some force into as you flip it.
