Fragrant with Ginger! Fluffy and Creamy Egg Soup

This is a mildly flavored, fluffy and creamy egg soup with the punch of fresh ginger.

Ingredients: 2 servings

Egg

Ginger (julienne)
20 - 30 g
Sesame oil
2 teaspoons
Parsley (for topping)
as needed
Soup
Water
400ml
Weipa
as needed
Soy sauce
1/2 tablespoon
Sake
1 tablespoon
Salt
a small amount
For the katakuriko slurry:
Katakuriko
1 teaspoon
Water
2 teaspoons

Steps

1. Julienne the ginger.
2. Heat the sesame oil in a pan, and stir fry the ginger.
3. When it's aromatic and turning brown, add the water. Bring to a boil and add the soup stock granules, sake, soy sauce and salt. Stir in the katakuriko dissolved in water to thicken the soup.
4. When it comes to a boil again, pour in the beaten egg and mix.
