This contains one whole carrot. It's an easy cake to make, where all you do is add each of the ingredients together and mix.
My mother baked me these many times when I was a child. She used small aluminium cups, but I use a pound cake pan.
If you are eating these more than a day after they have been baked, slice them and then microwave for about 20 seconds. It'll be nice and fluffy.
