Fluffy Cinnamon Carrot Cake

This contains one whole carrot. It's an easy cake to make, where all you do is add each of the ingredients together and mix.

Ingredients: 18 cm pound cake pan

Light brown sugar
100 g
1 medium (about 200 g)
Lemon juice
from 1/4 of a lemon
Vegetable oil
100 ml
Cake flour
150 g
Baking powder
1 teaspoon
1/2 teaspoon


1. Grate the carrot, wring out the excess moisture, then sprinkle on the lemon juice. Combine the flour, baking powder, and cinnamon and sift.
2. Crack the eggs into a bowl, add the light brown sugar and beat well.
3. Add the carrot and mix.
4. Add the vegetable oil in several doses and mix well.
5. Add the powder ingredients, fold with a rubber spatula.
6. If you are adding raisins, add here. They should come to about 40-50 g.
7. Pour the batter into the pan, bake on the bottom rack of the oven at 180℃ for 40 minutes and it's done..

My mother baked me these many times when I was a child. She used small aluminium cups, but I use a pound cake pan.
