These are cute and delicious daifuku!

Ingredients: 4 pieces

1. Prepare the ingredients.
2. Put all the ingredients except for the anko into a dish and mix.
3. Wrap with plastic wrap and microwave for 2 minutes.
4. Remove from the microwave and mix, wrap again, and heat for another 2 minutes.
5. Let cool covered with the plastic wrap until cool enough. Divide into 4 pieces to fit the molds. Divide the anko into 4 as well and roll into balls.
6. Dust the molds with cornstarch.
7. Wrap the anko in the mochi dough.
8. Pack into the mold.
9. And it's done!

I love flowers, so I made a daifuku in the shape of a rose. I made it easily in the microwave. These are called 氷皮月餅 (Bing Pi Yue Bing) in Chinese.
