Metabolism-boosting Warm Salad with Ginger and Carrot

This side dish combines the spiciness of ginger, the sweetness of carrot and the refreshing sourness of lemon! Increase your metabolism when you're on a diet with this salad!

Ingredients

Carrot
1 medium (150 g)
Ginger
2 pieces (50 g)
Salt
1/4 teaspoon
For the dressing:
Honey
2 tablespoons
Lemon juice
1 tablespoon (the juice from 1/2 lemon)
Olive oil
1 tablespoon

Steps

1. Finely shred the carrot and ginger.
2. Sprinkle with salt and mix lightly. Leave for 5 minutes until it wilts a little. This step brings out the sweetness of the carrot and is very important in making this salad really delicious!
3. Combine the dressing ingredients, mix together, cover with plastic wrap and microwave for 1 minute. Leave for an additional 5 minutes in the micowave.
4. Add some raisins for sweetness!
5. Add some walnuts for their anti-aging qualities! For better texture, leave whole nuts uncrushed.
