Cod Simmered with Daikon Radish

Cod, which is in season in the winter, goes great with daikon radish!! You can simmer it with just the moisture from the grated daikon. Kids and adults can enjoy this delicious dish.

Ingredients: 6 fillets

Cod (fillets)
Daikon radish
400 g (1/3)
Mitsuba (or leek)
as desired
◎Vegetable oil
2 tablespoons
◎Salt and pepper
a small amount
◎Plain flour
1/4 cup
◎Usukuchi soy sauce
2 tablespoons
2 tablespoons
4 tablespoons
◎Dashi stock granules
1 teaspoon

1. Place the cod on a paper towel. Salt and pepper both sides and shake off any moisture. Sprinkle both sides with flour. Grate the daikon and set aside.
2. Apply some oil to a large frying pan. Cook both sides of the cod to golden brown on medium heat (it's okay if it hasn't fully cooked through).
3. Add the grated daikon (with all of its juices), usukuchi soy sauce, mirin, sake, and dashi stock to a boil. Mix everything together and add to the frying pan from Step 2.
4. Close with a lid if you have, and simmer for 7-8 minutes. Once the juices have simmered down transfer to a serving plate, top with mitsuba if you like, and it's complete.
