Crispy Egg Cookies

These are crispy cookies with a lovely egg flavour.
There is also a chocolate version!

Ingredients: About 30 cookies

Cake flour
・・・130 g
Butter (salted or unsalted)
・・・50 g
・・・50 g
Beaten eggs (egg yolks)
・・・2 tablespoons (about 1 egg)


1. Soften the butter in a bowl, then add sugar and cream.
2. Pour the beaten eggs in 2 ~ 3 batches, and whisk well until the mixture becomes smooth.
3. Add cake flour, and fold in with a spatula.
4. Wrap with plastic wrap, and let it rest in the fridge for 1 hour.
5. When the dough has come together, cut out shapes with your favourite cookie cutters. In the meantime, preheat the oven for 180℃ / 350℉.
6. Bake for 15 minutes at 180℃ / 350℉.
7. And it's done.
8. Bonus tip When you are making a chocolate version, change the amount of the cake flour to 110 g, and add 10 g of cocoa powder.
