Preheat the oven to 180ºC. Mash the banana with a fork. Beat the eggs well and mix with the banana.
Add the remaining ingredients to the mixture from Step 1 and mix. Pour the batter into an oiled mold. Bake in the over at 180ºC for around 12 minutes. Done!
The batter is rather thin.
Story Behind this Recipe
I've been making lots of snacks with rice flour for my son, who has a wheat allergy. I came up with this recipe because I wanted to make a simple recipe that kids could eat every day.
There's no need to sifting the dry ingredients as the recipe uses rice flour, which will not clump. It's easy. Add 2 tablespoons of kinako for a delicious flavor. You could also with sesame. The baking time can vary depending on your oven, so adjust as necessary.
