Baked Donuts Made with Rice Flour & Bananas

I made these fluffy, chewy donuts for my son, who has a wheat allergy. There's no sugar in these, but the banana makes them sweet. They make a good healthy snack for adults, too!

Ingredients: 5-6 donuts

Banana (small)
1 (the banana I used this time was 65 g)
Egg (medium)
1
Rice flour
5 tablespoons
Skim milk powder
1 tablespoon
Baking powder
1/2 teaspoon
Vegetable oil
1 teaspoon

Steps

1. Preheat the oven to 180ºC. Mash the banana with a fork. Beat the eggs well and mix with the banana.
2. Add the remaining ingredients to the mixture from Step 1 and mix. Pour the batter into an oiled mold. Bake in the over at 180ºC for around 12 minutes. Done!
3. The batter is rather thin.

I've been making lots of snacks with rice flour for my son, who has a wheat allergy. I came up with this recipe because I wanted to make a simple recipe that kids could eat every day.
