This is a chewy pasta from the south of Italy.

Ingredients: 3 servings

Semolina
200 g
Strong (bread) flour
100 g
Water
140 ml
Salt
2 g
Olive oil
4 g

Steps

1. Combine all the ingredients in a bowl and knead.
2. Wrap with plastic and let rest for an hour.
3. Cut and shape into long cylinders.
4. Cut into 4 g pieces and use your fingertips to press them down to finish.
