Easy Crispy Pizza

This is easily made with store-bought tortillas. This is a teriyaki chicken pizza made in a frying pan. It's great for lunch or a snack.

Ingredients: 2 servings

Store-bought tortilla
Eggplant (slim Japanese type)
Shimeji mushrooms (or maitake or shiitake mushrooms)
as needed
Shredded nori seaweed
to taste
Teriyaki chicken
★Chicken breast
1/4 of one
★Soy sauce
2 tablespoons
1 tablespoon
2 tablespoons
1 tablespoon
★Juice from grated ginger
1 teaspoon
as needed


1. Slice the chicken breast, sprinkle with sugar (not listed), and let sit for 30 minutes.
2. Thickly slice the eggplant on the diagonal. Cook the mushrooms with the stumps intact. Take out of the pan and set aside.
3. Put the ★ seasonings into the frying pan from Step 2. Once the sauce has reduced, add the chicken and caramelize.
4. Put the tortilla in the frying pan and top with the chicken from Step 3. Arrange Step 2 on top and top with the sauce from Step 3.
5. Top with the cheese, cover with a lid, and turn on the heat. Cook on high for one minute, then on low.
6. Melt the cheese. Once the tortilla is crispy, transfer to a plate.
7. Sprinkle shredded nori or sesame seeds (amount separate from listed ingredients) on top to finish.
8. Sprinkle with Tabasco sauce to taste.
