Cut carrot into thin strips and mix ◇ evenly. (If you don't want the skin, then peel before cutting.)
Put Step 1 into a heat-proof dish covered with kitchen paper and microwave for 1 minute 20-30 seconds. (Just cover with the kitchen paper, don't wrap.)
Once the carrot becomes soft, it is ok. Mix with hard or semi-hard grated cheese, seasoning salt, coarsely ground black pepper and it's ready.
You can also sprinkle grated cheese and basil on top.

Story Behind this Recipe
When I started to bring a lunch box to work, I wanted a microwaveable and more colourful dish. So, I modified my carrot stir-fried with basil recipe and made this microwave version.
When you microwave in Step 2, use kitchen paper, not plastic wrap. This helps to dry the carrot out, similar to stir frying. Because grated cheese contains salt, please add only a small amount of salt and adjust later as needed.
