Microwave Cooked Basil Cheese Carrots

Just microwave thin strips of carrot mixed with olive oil and basil.
This is ideal for an extra dish, lunch box, or appetizer.

Ingredients: 1 serving

net weight about 50g
◇Olive oil
1/3 to 1/2 teaspoon
◇Dried basil leaf
a small amount
a small amount (about 2 pinches)
◇Coarsely ground black pepper
to taste
Hard or semi-hard grated cheese
1 teaspoon or to taste
Salt and coarsely ground black pepper
as needed


1. Cut carrot into thin strips and mix ◇ evenly. (If you don't want the skin, then peel before cutting.)
2. Put Step 1 into a heat-proof dish covered with kitchen paper and microwave for 1 minute 20-30 seconds. (Just cover with the kitchen paper, don't wrap.)
3. Once the carrot becomes soft, it is ok. Mix with hard or semi-hard grated cheese, seasoning salt, coarsely ground black pepper and it's ready.
4. You can also sprinkle grated cheese and basil on top.
5. User Karun chan made this dish with apple, so I tried it too. It has a nice sweet and sour flavour.

Story Behind this Recipe

When I started to bring a lunch box to work, I wanted a microwaveable and more colourful dish. So, I modified my carrot stir-fried with basil recipe and made this microwave version.
