Meat-Miso for Dan Dan Noodles

Besides using this on dan dan noodles, you can serve it on rice, bread, udon noodles or use it as a pasta sauce.
Make a batch and freeze it to use it any time you like.


Ground meat (any meat)
200 g
Finely chopped garlic
1 tablespoon
Ginger, finely chopped
1 tablespoon
Japanese leek (or onion), finely chopped
1/2 stalk (or 1/2 onion)
1 tablespoon
Sake (or Shaoxing wine)
2 tablespoons
Soy sauce
2 tablespoons
Hatcho miso (or tianmianjiang)
1 tablespoon
Sesame paste (or zhimajiang)
3 tablespoons
Vegetable oil
2 tablespoons
Salt and pepper
a small amount


1. Heat vegetable oil in a pan, and stir fry the finely chopped garlic and ginger.
2. Add the finely chopped leek (or onion) and stir fry.
3. Add the ground meat, and stir fry until cooked through.
4. Add the doubanjiang, and stir fry well to bring out the spiciness.
5. Add the sake, miso, sesame paste and soy sauce, and adjust the seasoning with salt and pepper.
