A Whole Onion! Sweet New Harvest Onion Consommé

This is an extravagant soup that has 1 whole sweet new harvest onion per serving. The sweetness of the onion is so delicious. It's an easy to make and healthy soup.

Ingredients: 1 serving

New harvest or sweet onion
Chicken soup stock cube
500 ml
Black pepper
to taste
Finely chopped parsley
to taste


1. Peel the onion.
2. Cut out the root using a knife.
3. Put the stock cube and onion in 500 ml of water.
4. Cover with a small lid that fits on top of the contents of the pan (a drop lid or otoshibuta) and simmer over medium heat for 30 minutes.
5. When the onion is tender and the soup tastes just right, it's done. If the flavor is thin, simmer for a while longer. Add black pepper to taste.
6. Ladle into a soup bowl, add chopped parsley to taste, and it's done.
