Shio-koji Tomato Sauce

This is an all-purpose seasoning made from shio-koji (salted fermented rice malt) and tomato purée. It's so handy since it's so versatile.

Ingredients

Tomato purée
300 g
Garlic
1 clove
Onion
1/2
Olive oil
1 teaspoon
Shio-koji (salt fermented rice malt)
1.5 tablespoons
Pepper
a small amount

Steps

1. Mince the onion and garlic. Heat olive oil in a pot, lightly sauté the garlic, add the onion, and sauté until translucent.
2. Add tomato purée and shio-koji and simmer for 15 minutes. Season with pepper to taste.
