Ground Meat and Vegetable Rice Bowl with

A thick and silky ankake-sauce rice bowl that's just a little bit spicy with a tiny bit more ginger than usual. Try this on a cold day.

Ingredients: 2 to 3 servings

Ground meat (pork and beef combination, pork, chicken - anything works)
about 250 g
Ginger
2 pieces
Japanese leek
1 stalk
Onion
1/2
Carrot
1/2 medium
Plain cooked rice (rice with barley if possible)
as much as you like

Soy sauce
3 tablespoons
Mirin
3 1/2 tablespoons
Sake
2 tablespoons
Water
200 to 230 ml

Sesame oil (for frying)
1 to 1 1/2 tablespoons
.
Green onion (for garnish)
1 stalk
.
Katakuriko slurry
1 tablespoon katakuriko + 2 tablespoons water

Steps

1. Chop the ginger, leek, carrot and onion finely. Chop the green onion finely also (into thin rounds). Put the chopped ginger and leek together.
2. Heat the sesame oil in a pan over low heat, add the ginger and leek and slowly stir fry until it's fragrant. Take care not to burn it!
3. When it's softened, add the carrot and onion, turn the heat up to medium, and stir fry until softened.
4. Add the ground meat to the pot, turn the heat up a bit to medium-high, and stir fry until cooked through.
5. Add water to the pot and bring to a boil, then add the soy sauce, mirin and sake and bring to a boil again.
6. Turn the heat down a bit and add the katakuriko dissolved in water little by little to thicken the sauce.
7. Put rice in serving bowls or plates, spoon the meat sauce over it, sprinkle on the chopped green onion and it's done!
