For Osechi! Cute & Extravagant With Decorative Vegetables - Chikuzen-ni

Just by adding some decoratively cut vegetables, this osechi dish becomes cute and extravagant!

Ingredients: about 4 servings

Chicken
250 g
Cooked bamboo shoots in brine
200 g
Carrot

Lotus root
1 section
Burdock root

Dried shiitake mushrooms

Snap peas

Dashi stock
3 1/2 cups (700 ml), including the soaking liquid from the shiitake mushrooms
Soy sauce
2 1/2 tablespoons
Sugar
4 tablespoons

Steps

1. Rehydrate the dried shiitake mushrooms. (Keep the soaking water.)
2. Blanch the snow peas, and refresh them in cold water.
3. Cut the lotus root decoratively. Please refer to Recipe ID: 1661686 for the method.
4. Cut the carrot decoratively, Please refer to Recipe ID: 1659790 for the method.
5. Cut the konnyaku decoratively, Please refer to Recipe ID: 1661931 for the method.
6. Chop the burdock root and bamboo shoot into chunks.
7. Put a little oil in a pan and stir fry the pork.
8. Add the vegetables and stir fry.
9. Add the dashi stock and the soaking liquid from the shiitake mushrooms and bring to a boil then simmer. Flavor with with soy sauce and sugar, and it's done.
10. It will taste much better if you let this rest for a while after it's done!
