Crispy Matcha Cookies

Use up leftover egg yolks!
This is a nice present for friends who like matcha.
It's a crispy cookie.

Ingredients

Butter
45 g
Sugar
30 g
Egg yolk
1
Vanilla essence (optional)
a little
Matcha
3 g
Cake flour
60 g
Walnuts
as needed

Steps

1. Stir the room temperature butter until creamed, add sugar and whisk together.
2. Add egg yolk and mix in.
3. Add vanilla essence and continue mixing.
4. Combine matcha and flour, sift into the bowl, and use a spatula to mix in.
5. It's done once it's well incorporated like the photo. Wrap in plastic wrap, roll into a tube, and let it sit in the freezer for 20 minutes.
6. Slice into 5 mm and top with chopped walnuts, as you like. Bake in an oven preheated to 355°F/180°C for 15 minutes.
