No Need for Baking Soda or Nails! Delicious Stewed 'Kuromame' Black Soybeans

These kuromame turn out plump and unwrinkled, even without baking soda or nails (the traditional method)
They are delicious and easy to make!

Ingredients

Kuromame
250 g
Seasoning:
Sugar
160 g
Soy sauce
1 and 1/2 tablespoon
Sake
1/4 cup
Salt
a small amount
Water
6 cups

Steps

1. Put the seasonings and water in a pot, then bring to a boil.
2. Rinse the kuromame, then add to the pot.
3. Cover with a lid, then let sit for about 12 hours.
4. Bring the beans to a boil, reduce to low-medium to low heat, and simmer.
5. While it's simmering, add water 4 or 5 times, add about 1 cup of water (to prevent the water from boiling down). Remove from heat.
6. Cover with a lid, then let sit for about 12 hours.
7. By repeating the process of heating, then letting it sit for 12 hours, the flavors will absorb well, making it tasty! If you have the time, give it a try!
