Easy Minestrone Packed with Vegetables

It's a veggie-filled minestrone soup that you can make pretty easily.

Ingredients: about 6 servings

Tomatoes
2
Cabbage
2 large leaves
Carrot
1/2
Onion
1
Potato
1
Bacon
80 g
Soup stock cubes
2
Ketchup
2 teaspoons
Salt and pepper
To taste
Water
2 1/2 cups (500 ml)

Steps

1. Dice the vegetables and bacon into 1 cm pieces.
2. Sauté the bacon and onion until the onion is cooked through.
3. Add the other vegetables, and sauté until the tomato falls apart.
4. Add the water, soup cubes, salt, pepper and ketchup. Simmer until the vegetables are well cooked and it's done.
5. It's even better if you make it the day before you plan to eat it.
