Crumble the tofu and break up the chocolate bar. Add to a microwave safe bowl, and heat in the microwave for 2 minutes at 500 W. Then, mix well. It's okay if some lumps of tofu remain.
Preheat your oven to 170℃ and set your timer for 15 minutes. Add the egg to the Step 1 mixture and mix.
Add the pancake mix in 2-3 batches, mixing after each addition.
Pour the batter into donut molds and, once the oven has heated, bake. Leave to cool before removing from the molds, and there you have it.
Story Behind this Recipe
I wanted to try substituting tofu for soy milk in a recipe I had, and it turned out pretty good.
There is no need to cover the tofu and chocolate mix with a lid or plastic-wrap when heating. The lumps of tofu will disappear when baking, so you need only mix to combine in Step 1. Adjust the baking time according to your oven.
