Golden and Fluffy Omelette

Thanks to the shiro dashi, this omelette keeps its golden colour. The mayonnaise gives a fluffy texture. Perfect for your bento.


Eggs (1 medium and 1 large)
* Shiro-dashi
2 scant teaspoons
* Umami seasoning
a small amount
1 teaspoon
1 teaspoon


1. Break the eggs into a bowl or a cup, add the 4 ingredients marked * and mix.
2. Make the omelette as you normally do. Cook over low heat slowly and patiently.
3. Cut it up and put it in your bento. Even the cross section looks golden.

Story Behind this Recipe

I have been making this from the time I lived alone. The shiro dashi doesn't discolour the egg (like light soy sauce), and the egg remains golden. I uploaded this recipe at last.
