Any ingredients you want to add
Finely chop the ginger and garlic. Cut the green onion into fine pieces. Add sesame oil to a heated earthenware pot and stir fry the ginger, garlic, and green onions.
When fragrant, add the 1) ingredients and stir fry again. Then add the 2) ingredients and bring to a simmer.
Add sugar and salt. Taste to check the flavor. Add any other ingredients you want to have in the hot pot, and boil.
Story Behind this Recipe
I tried to recreate an imitation version of the soup I had at a hot pot restaurant.
The ingredients in the photo are: chicken meatballs, tofu, Chinese cabbage, daikon radish, chrysanthemum greens, enoki mushrooms, and mizuna greens. I made the broth less salty, taking into consideration that it would cook down and become concentrated. If you feel the broth is lacking in flavor, adjust with soy sauce or salt.
